The Roasting Company
Not much has ever stood between me and a good piece of chicken. I grew up in a city where we had chicken on the table and ( because it was wartime) a victory garden and chickens in the backyard. Even the sight of a headless hen flapping its drunken circles around that yard never turned me from my favorite meal. ( I had pet dogs, cats, ducks, rabbits and turtles, but no pet chickens.) Just let me count the ways I grew up loving chicken -- baked, broiled, boiled and pulled for salads, stews, soups, jellied for cold suppers on hot summer nights, and of course, Fried. Every Sunday. I guess the one way I never experienced chicken was rotisserie. But now I'm a believer because of Charlotte's own Roasting Company and their special recipe for marinated rotisserie chicken. They inject the birds with a Costa Rican sauce that makes up for those home cooked dinners I've never been able to duplicate. The Roasting Co. has its many ways of serving chicken: baked whole, quartered, on rice with black beans, onions and cheese, tacos, wraps and a great walnut chicken salad. They also cook up good pork dishes, veggie and BBQ wraps, all kinds of salads, buttery corn muffins and the best buffalo wings in town. The vegetables are super; varied and tasty enough for the strictest vegetarian -- from stir fry to collards, dill butter beans, garlicky new potatoes, basil green beans and many other choices. Located in three areas -- 1601 Montford Dr. near the Park Rd. Shopping Center, 9311 J.W. Clay Blvd. near UNCC, and 8301 Magnolia Estates Dr. across from the Peninsula at Lake Norman, the Roasting Co.'s menu is also available to go, for one or group orders for tailgating and catering. Call'em or drop by -- start with their rotisserie salad for lunch and take home a chicken and black bean combo for dinner. Pick up an Independence Boulevard from the shelf on your way out.
